the light is you apple crumble

Vancouver is a rainy place to live most of the time.  Which is all the more reason to find things that remind us of sunnier, happier days.  One of my go-to things to perk up my rainy days is music.  The right song can bring an instant smile to my face.

For the past few months my biggest pick me up song has been from a local band called Said The Whale.  They have a catchy song called “The Light Is You” that is like instant sunshine.  I recently checked out the video for it on youtube on a drizzly weekday morning and not only did it make me smile, it made me crave apples.

So I went out to my local farm market, my iPod set to repeat, and set about making the best ever apple crumble.  If you need a little light in your life try this out!

you will need:

  • a 8x8 ovenproof glass dish
  • a big bowl
  • a small bowl
  • measuring cups 

ingredients:

the “apple”

  • 4-5 large apples - I used Sunshine apples, but they are a little soft, try Granny Smiths or Galas, or any mix of the 2
  • the juice of 1 lemon
  • 1 tbsp minit tapioca **se note below** (don’t skip this... it sounds insane, but it’s crucial, don’t worry you can’t taste it)
  • 1 tbsp raw cane sugar
  • 1 tsp cinnamon

the "crumble"

  • 3/4 cup quick oats (not instant oatmeal)
  • 1-2 tbsp margarine
  • 1 tbsp whole grain pastry flour
  • 1 tbsp raw cane sugar
  • 1 tbsp margarine
  • dash of cinnamon

Preheat the oven to 350F

Peel all of your apples & dice them into little chunks.  Place these in your big bowl & cover them with the juice of 1 lemon so they don’t turn brown.

Next mix in the minit tapioca, cane sugar & cinnamon.  Toss everything together until it’s mixed really well & then pour it into your 8x8 glass ovenproof dish.

The next part you’re going to get your hands dirty... so if you didn’t before take this opportunity to wash them.  Place the oats, flour cinnamon & margarine in the smaller bowl.  Next you want to stick your hands in and scrunch the margarine into the rest of it.  It’ll take a little work, but eventually you should end up having the margarine mixed throughout and the mixture should be crumbly.  If it’s not coming together add in a little more margarine until you get the right consistency.

Now go wash your hands again because they’ll be gross.

Spread the crumble over top of the apple mixture that’s already in the dish.  It should cover everything over the top.

Once the oven is preheated stick in your crumble and bake for about 40 minutes or until the top is brown.  You should be able to smell it when it's close to being ready.

Invite over other people, serve with some good sugar-free vanilla ice cream & spread the sunshine around!

edit: as a heads up for anyone who's trying to figure out what Minit tapioca is, here's a photo to help you out. The first time I tried to find it I looked for about 20 minutes as they often have it hidden somewhere in the bakery aisle.  It's not the same as pearl tapioca, and it's not tapioca flour, it's a powdery fine substance.

Thanks Jake! I'm glad you liked the crock-pot chicken casablanca. The recipe for it will be up next friday in the 2nd "class" of the freshman 15 that I'm making for Jon & friends.
